Burrito

Ingredients

  • 2 tortillas​

  • 4 eggs

  • 1/2 black beans

  • 1 tbsp hot sauce

  • 40g cheese, grated

  • 4 tbsp hot salsa

  • 1 avocado

  • coriander, optional

​

Serves: 2

Complexity: Easy

Method

​

  1. ​Beat the eggs with salt and pepper and add to a hot pan, stirring consistently

  2. Drain the black beans and add to the scrambled egg mixture

  3. Once the eggs are cooked through, remove from the heat, add the hot sauce and mix

  4. Warm the tortillas and add the egg/bean mixture, sliced avocado, grated cheese, salsa and coriander if desired

  5. Wrap into a burrito and serve
