2 tortillas​

4 eggs

1/2 black beans

1 tbsp hot sauce

40g cheese, grated

4 tbsp hot salsa

1 avocado
-
coriander, optional

Method

​Beat the eggs with salt and pepper and add to a hot pan, stirring consistently
-
Drain the black beans and add to the scrambled egg mixture
-
Once the eggs are cooked through, remove from the heat, add the hot sauce and mix
-
Warm the tortillas and add the egg/bean mixture, sliced avocado, grated cheese, salsa and coriander if desired
-
Wrap into a burrito and serve
