Ingredients

4 chicken breasts, diced

1 white onion

1 red pepper

1 yellow pepper

1 tbsp chipotle paste

2 packets pre-cooked rice

1 tin sweetcorn

1 tin black beans

1 iceberg lettuce

150g cheese, grated

1 pot hot salsa

2 avocados

Method

Preheat the oven to 180°C / 350°F
-
Slice the onion and peppers and add to a freezer bag along with the diced chicken and chipotle paste. Mix together and leave to marinate for 1 hour

Add the marinated chicken and vegetables to a oven tray and cook for 18-20 minutes until the chicken is cooked through

Cook the rice according to packet instructions

Slice the lettuce and add to 4 bowls. Top with the cooked chicken mix, warmed rice, sweetcorn, black beans, salad, cheese and smashed avocado

Top with coriander and enjoy
