Ingredients

  • 4 chicken breasts, diced

  • 1 white onion

  • 1 red pepper

  • 1 yellow pepper

  • 1 tbsp chipotle paste

  • 2 packets pre-cooked rice

  • 1 tin sweetcorn

  • 1 tin black beans

  • 1 iceberg lettuce

  • 150g cheese, grated

  • 1 pot hot salsa

  • 2 avocados

Serves: 4

Complexity: Easy

Method

  1. Preheat the oven to 180°C / 350°F

  2. Slice the onion and peppers and add to a freezer bag along with the diced chicken and chipotle paste. Mix together and leave to marinate for 1 hour

  3. Add the marinated chicken and vegetables to a oven tray and cook for 18-20 minutes until the chicken is cooked through

  4. Cook the rice according to packet instructions

  5. Slice the lettuce and add to 4 bowls. Top with the cooked chicken mix, warmed rice, sweetcorn, black beans, salad, cheese and smashed avocado

  6. Top with coriander and enjoy
