Chicken Pesto

Ingredients

4 large chicken breasts

200g block halloumi, sliced

2 tbsp pesto
-
1 large pack mixed leaf salad

1 pack cherry tomatoes, halved

pine nuts, to serve
Serves: 4
Complexity: Easy

Method

Slice the chicken into strips, add to a hot pan and fry until cooked through

Meanwhile, slice the halloumi and fry in a dry pan until heated through on both sides

When the chicken is cooked through, add 1 tbsp pesto to the pan and combine
-
Add the mixed leaf salad and cherry tomatoes to bowls and top with the sliced chicken and halloumi

Drizzle over the remaining pesto and some pine nuts and serve
