Ingredients

  • ​4 large chicken breast​s

  • 200g block halloumi, sliced

  • 2 tbsp pesto

  • 1 large pack mixed leaf salad

  • 1 pack cherry tomatoes, halved

  • pine nuts, to serve

Serves: 4

Complexity: Easy

Method

  1. Slice the chicken into strips, add to a hot pan and fry until cooked through

  2. Meanwhile, slice the halloumi and fry in a dry pan until heated through on both sides

  3. When the chicken is cooked through, add 1 tbsp pesto to the pan and combine

  4. Add the mixed leaf salad and cherry tomatoes to bowls and top with the sliced chicken and halloumi

  5. Drizzle over the remaining pesto and some pine nuts and serve
