  • ​1 wholegrain bagel

  • 1 avocado

  • 1/2 tin butterbeans, drained

  • A handful of cherry tomatoes

  • Balsamic glaze (optional)

  • Salt and pepper

Serves: 1

Complexity: Easy



  1. ​Slice your bagel in half and toast

  2. Halve and de-stone your avocado, remove the flesh from the skin and add into a bowl

  3. Drain the butterbeans and add half of the tin into the bowl with the avocado

  4. Add salt and pepper to taste and mash until desired consistency

  5. Add the butterbean avocado mash to the top of each bagel half, top with halved cherry tomatoes and drizzle with balsamic glaze if desired
